Regarding the start / stop argument and the 300k value found in the forums: All WD Ultrastar are made for "only" 50k start / stop circles. This is stated in their >300 pages huge "user manual" pdf, which can be easily found online. I never seen a higher value. But finally in 10 years you still would have 14 spins per day, which should be still hard to reach.

The /mnt/<cache_pool_name> paths, which you used for your docker containers, are not needed anymore. Unraid supports "Exclusive access" since a while, which is a direct mount of for example /mnt/user/appdata to /mnt/nvme/appdata which bypasses the sshfs overhead.

There is a cheap RISC-V motherboard with chip coming out called the Milk-V Oasis. It's RISC-V, so it's very energy efficient. It's just the thing for efficient home servers.
