Chef John Gregory-Smith shared one of his favourite recipes for a salmon traybake, perfect for a midweek meal
Salmon makes an excellent choice for busy weeknight dinners, packed with flavour and nutritional value. Yet if you’ve grown tired of the usual preparations, one chef has unveiled his favourite recipe for a mouth-watering salmon traybake, reports the Express.
Chef and TikTok content creator John Gregory-Smith recently demonstrated his version of a traditional salmon traybake in a TikTok video, ideal for quick midweek cooking. John incorporated a special ingredient that transforms an ordinary salmon dish into something extraordinary.
He described the result as “perfection”. Drawing from his latest cookbook, John pledges bold flavours in meals that require minimal preparation time.
In the video’s caption, he explained: “If you are looking for a very quick and easy dinner that feels healthy without meaning to be, you have to try this new traybake. Roasted lentils, harissa salmon and garlic yoghurt – a perfect combo that’s so easy to throw together.”
The secret to John’s outstanding salmon dish is rose harissa, an aromatic, spicy North African chilli paste renowned for its delicate floral characteristics. It introduces a gentle warmth from the chilli alongside other complex spices.

Speedy Harissa Salmon Traybake
Ingredients
- Salmon fillet
- Puy lentils
- Olive oil
- Salt and pepper
- Rose Harissa
- Lemon
- Honey
- Garlic
- Yoghurt
- Coriander, chopped
Method
Firstly, rinse and drain the lentils. Spread them out on a baking tray and pat away any excess moisture with a paper towel.
Next, drizzle over some olive oil and season with salt and pepper. Roast the lentils in the oven for 20 minutes until they’re crispy. Once done, remove from the oven.
Prepare the dressing for the salmon in a bowl. Add the harissa, then squeeze in the juice of one whole lemon. Include a small squeeze of honey, season with salt and mix everything.
Spread some of the marinade over the salmon fillets. Create a space among the lentils and place the salmon fillets on the tray.
Bake in the oven until the salmon is cooked through. While the salmon is cooking, prepare the garlic yoghurt dressing.
To serve, spoon the yoghurt onto a plate, top with the lentils, salmon, chopped coriander and a lemon wedge. Finish off by drizzling over some of the reserved harissa marinade.
