Parsnip and potato mash with sage and brown butter
I never make mash on Christmas Day – it’s all about the roasties in this house – so a plate of buttery mash is a lovely comforting dish to have on Christmas Eve. The parsnips make this slightly sweet, which works well against the venison dish I serve it with.
I’m not keen on gadgets but one year Nigella Lawson recommended the Masha Electric Potato Masher and it’s brilliant. I make mash much more often because of it. You can get it from Lakeland. And yes, it’s worth it.
Don’t be tempted to skimp on the nutmeg, it really lifts the flavour of this side dish.
