Roast pumpkin with freekeh and shatta recipe

To make the shatta, put 5 roughly chopped red chillies, 3 chopped garlic cloves, 50ml extra-virgin olive oil, 50g tomato purée, 1 tsp ground cumin and the juice of ½ lemon into a blender or food processor with 50ml water and some seasoning. Blend using the pulse button. It shouldn’t be completely smooth.
