So was the reasoning for installing ESXi over just installing Windows Server 2019/2022 ect. was that having the Win Server OS install natively was going to be a larger footprint than ESXi?

Oh just in case, for ISO installations, use Ventoy. This will make your usb able to boot ISO files, so instead of flashing 1 key, you just put your ISOs in the key, and the Ventoy bootloader will let you select what ISO you want to boot.
