As the temperature drops, the season for wholesome roast dinners is well and truly upon us. A roast dinner, in my view, is only as impressive as the side dishes that accompany it.

If you’re still simply boiling carrots and broccoli and leaving them at that, there is undoubtedly a better approach. To prepare the finest broccoli possible, the first step is to abandon boiling altogether.

Roasting will draw out considerably more flavour, retain a superior texture and produce a far more satisfying result.

There’s also one addition that will elevate your broccoli from merely acceptable to genuinely outstanding — cheese.

A scattering of Parmesan cheese over your roasted broccoli renders it saltier, more indulgent and altogether more delicious. It makes for an ideal side dish at a roast dinner, or whenever your plate could do with a touch more greenery.

It’s also remarkably simple to prepare.

If you want to try it, you’ll need:

  • Two heads of broccoli cut into florets
  • Three cloves of minced garlic
  • Four tbsp olive oil
  • One tbsp lemon juice
  • One quarter cup grated Parmesan cheese
  • Salt and pepper

Method

Preheat the oven to 220°C.

Toss the broccoli in oil, lemon juice, garlic and salt and pepper. Line a baking tray with baking paper.

Spread the broccoli in a single layer on the tray and roast for 16 -20 minutes until browned and cooked through

Remove and toss with the Parmesan cheese and extra cracked black pepper.
