This nostalgic sponge cake with white icing and rainbow sprinkles can be made in just 30 minutes using an air fryer, and people can’t believe how good it tastes
It’s something you’d see at school dinnertime – but you can whip it up at home as well, and it requires just half an hour of your time. School cake – a straightforward sponge topped with a generous layer of white icing and colourful sprinkles – has been trending across social media as home bakers try to replicate it in their own kitchens.
Rather than combining everything and placing it in a conventional oven, many have been utilising their air fryers instead – something inconceivable for those who savoured it during their school days. Posting the recipe, Swan Brand UK revealed on TikTok that you need sugar, butter, eggs, milk, flour and baking powder.
Following this, the home baker combines all ingredients before greasing a baking tray and transferring the mixture inside, prepared for the air fryer.
The clip continues: “Air fry at 160°C for 30 minutes. Top with thick icing and sprinkles.”

Responding to the video, one viewer commented: “This was so good, thank you.”
Another person said: “Equal amounts of everything – turns out perfect every time.”
A third noted: “It is very good, but if you are trying to check if it’s done, don’t make big holes – the icing falls through.”
According to Cake Trays, during the early 20th century, it was typical for pupils to bring cakes and other delicacies from home to school for sharing with fellow students.
A statement explains: “School cakes are a beloved tradition in many schools across the United Kingdom.
“These cakes are simple, wholesome, and budget-friendly options that provide a satisfying snack or dessert for students.
“In this blog, we will explore the history of school cakes, their popularity, and the different types of school cakes available.”
It continued: “School cakes have remained popular over the years due to their simplicity and affordability.
“They are filling and satisfying snacks that can be easily made in large batches to feed a large number of students.
“Additionally, school cakes are often served with a side of custard or cream, which provides added richness and texture.”
The most prevalent variety of school cake is a sponge, typically prepared using flour, sugar, eggs, and butter, and presented with a coating of jam or icing on the surface.
The statement continues: “School cakes can also come in a variety of other flavours, including chocolate, vanilla, and lemon. They are often made in large batches and cut into individual portions for serving.”
