The restaurant will remain open as usual throughout the building works, with the new bar expected to be completed and launched in spring 2026.

The building’s Grade II-listed character will be preserved, including its distinctive glass dome, stained glass details and central circular bar within the original restaurant. Enhancements will include two new private dining rooms on the first floor alongside the bar extension. The interiors will reflect The Cut & Craft’s refined and elegant style, featuring deep blue furnishings, brushed metal finishes and a rich, heritage-inspired colour palette.

The redesigned space will also provide access to the original Collinson’s Café balcony, where Titanic bandleader Walter Hartley once performed—blending musical history into the venue’s modern design.

The private dining rooms will offer flexible use, either as separate spaces or combined to accommodate up to 40 guests seated or more than 100 standing. The expansion will also support a broader menu, introducing a curated selection of premium bar snacks and small plates.

Since opening in York in 2018, The Cut & Craft has grown steadily, with its Leeds venue launching in 2022 and Manchester following in 2025. This £1m investment in the Victoria Leeds site, introducing a fresh concept, follows a successful year for food and drink at the destination, alongside brands including The Ivy, The Ivy Asia and Caffè Concerto.
