Spring into Style with Kelly

Fridays with Oscar is all about casual outfits, and I usually shop my closet – which is easy to do if you have a collection of tried and true classic wardrobe staples. Cashmere Tees from J.Crew are at the top of my spring wardrobe list. I brought this top along with me to Barcelona, you can see my capsule wardrobe here. Classic chinos are also on my list– these are old, but find a similar pair at Vineyard Vines. I am wearing a new item today though, The Milano Fisherman Sandal from Madewell.

The Benefit: A Sake Cocktail

This is a refreshing cocktail with a low ABV, that you can make lower by nixing the vodka. I love the refreshing flavor of grapefreiut juice in this sake cocktail, but if you can’t tolerate grapefruit due to medications, try swapping with orange juice for a citrusy alternative.
- 4 tbsps. Lemongrass paste
- 1 tsp. Grated fresh ginger
- 3 tsp. Sugar
- 2 oz. vodka
- 1 cup premium sake
- 3 oz. freshly squeezed pink or ruby red grapefruit juice
- 1 tbsp freshly squeezed lemon juice
- Lemon twist for garnish
-
Muddle together in the bottom of a cocktail shaker sugar, lemongrass paste, and grated ginger. Pour in vodka and let sit for at least 15 minutes.
-
Add sake, grapefruit juice, lemon juice, and plenty of ice. Shake well, until very cold. Double-strain into an ice-filled glass, garnish with a lemon twist.

No-Wrap Gyoza Dumplings
Asian dumplings are one of the best things on earth, in my opinion! I always want to make them from scratch but get discouraged with the time and effort it takes to make the dough and fold the dumplings. These No-Wrap Gyoza Dumplings are a great way to get a fresh dumpling without the hassle of making the dough and wrapping the dumpling.

- 4 Napa cabbage leaves
- Pinch of kosher salt
- ¼ cup finely chopped chives
- 6 oz. ground pork
- 1 tbsp. Japanese BBQ Sauce
- 1 tbsp. Sake
- 1 tbsp. Cornstarch
- Pinch of kosher salt
- Drizzle Sesame Oil
- 10 Dumpling Wrappers
- 3 tbsp. Water
-
Chop the cabbage and rub it with salt. Let sit for 15 minutes, then squeeze out the liquid.
-
In a medium bowl, combine the pork, cabbage, chives, BBQ sauce, sake, and cornstarch. Mix well.
-
Grease a nonstick frying pan with sesame oil. Use a tablespoon to measure out 10 balls of the pork mixture and place the balls directly on the oiled nonstick pan.
-
Place a dumpling wrapper over each meatball.
-
Cook on medium heat until the bottoms begin to brown.
-
Add the water to the pan and cook with the lid on until cooked through, about 5-7 minutes.
-
Drizzle on more sesame oil and continue to cook until the bottoms are golden brown and crispy.
-
Serve with soy sauce and chili oil.
