Have another shot and call in sick! Jude Bellingham tells Brits to stay up partying after they pulled an all-nighter to watch Three Lions 3-2 triumph over Mexico City – as millions prepare for the ‘mother of all Mondays’

Harry Kane and Jude Bellingham celebrate after Bellingham's second goal against Mexico during the last-16 clash at the Azteca stadium on Sunday night

England‘s Three Lions swept to victory on the crest of a Mexican wave today after a nerve-wracking roller coaster match which saw millions of fans pull an epic all-nighter.

They beat the World Cup hosts 3-2 at their home Azteca Stadium in Mexico City in one of the most thrilling games of modern times.

Thomas Tuchel‘s side’s heart-stopping triumph sets them up for a quarter-final showdown against Norway in Miami on Saturday.

As millions of Brits stayed up until gone 4am for the final whistle, employers are being warned of a ‘mass sickie’ – encouraged by none other than England’s golden boy Jude Bellingham.

After scoring two of his side’s three goals and collecting his player of the match award, he advised England fans to ‘have another shot and text your bosses to say you’re not coming in tomorrow’.

It came after companies were warned to expect a productivity hit as Britain prepares for the ‘mother of all Mondays’ recovering from the night before.

But fans were adamant the headaches are worth it after Sunday’s last-16 clash nixed the demons from England’s last outing at the Azteca 40 years ago when Diego Maradona’s ‘Hand of God’ goal broke the nation’s hearts at the 1986 World Cup.

In the seething cauldron of the world’s greatest football arena, the roar from 62,000 fanatical Mexicans was as spine chilling as it was ear-splitting.

But Bellingham‘s brace of goals within two minutes of each other set the game alight and sent the 18,000 England fans in the stadium wild.

Then the Mexicans went wild when their reply came a few minutes later to take the score to 2-1 and their fans launched their beer, cups and anything else to hand into the air.

In the second half, Jarell Quansah got a red card and became the first England player to be sent off at the World Cup since Wayne Rooney in 2006, taking England down to ten men.

But then Harry Kane scored a penalty to make it 3-1, only to gift Mexico a penalty a few minutes later.

The Mexico team have played ten World Cup matches at their home stadium since 1970 and never lost any of them. They had not conceded a single goal this whole tournament – until Kane and Co came to town. Mexico hadn’t suffered three goals against them in a match since 1999.

The stadium is 2,240m above sea level and there was concern about the altitude, but Tuchel’s men seemed unaffected. As well as having the advantage of always playing at home, Mexico officials made sure every seat in the 80,824-capacity stadium last night was equipped with a Mexico flag to wave.

The explosive atmosphere of the match was heralded all afternoon by almighty claps of thunder. Before the game started, the stadium went into its lightning lockdown mode and kick-off was delayed by an hour.

England got off to a bad start in the first half with a yellow card in the opening minute for Arsenal’s Declan Rice after a high boot clipped Luis Romo on the head.

There were howls and whistles from the partisan Mexican crowd as Rice went in the book with the referee setting out his stall early.

England were happy to keep possession for the opening exchanges and although unlikely to silence the baying mob they were able to contain Mexico.

But there was a heart stopping moment 15 minutes in when Jordan Pickford had to make a lightning reaction save form a Raul Jimenez diving header.

It was sheer brilliance and more than made amends for his error at the near post against Democratic Republic of Congo in the previous match.

Barcelona bound Anthony Gordon who started the match also impressed after an indifferent couple of group games.

The hydration break was met wit the customary boos from England fans but the atmosphere was electrifying as every Mexican touch was greeted with oles and the Three Lions were jeered.

A brave and valiant attempt by the 5,000 England fans behind Pickford to break into a chant was quickly drowned out by the crowd.

But it was the men in white who were cheering when Jude Bellingham scored England’s first when Rice and Saka had combined to provide him with a diving header in the 36th minute.

It didn’t silence the crowd but it temporarily quietened them and England fans were in delirium when Bellingham scored again two minutes later.

However they were back in the game just before half-time when Julian Quinones converted a free kick – but the England defence were able to see out the first half.

After half-time, jubilant scenes broke out again at the 60-minute mark when Harry Kane scored England’s third goal of the match after Anthony Gordon won a penalty.

Fans in Boxpark Wembley and supporter zones across the UK cheered ecstatically and threw their pints in the air after determinedly staying up into the early hours.

It came after the crowd had been quietened minutes earlier when defender Jarell Quansah was sent off following a VAR check over a high tackle.

The mood dipped again when Mexico reduced the deficit to 3-2 through a Raul Jimenez penalty after Harry Kane was adjudged to have committed a foul in the box, following a VAR check.

But after an agonising 11 minutes of extra time in the second half, the final whistle signalled England’s return to the quarter-finals of the tournament before fans in Mexico spontaneously broke out into a rendition of Sweet Caroline.

After collecting his player of the match award Bellingham advised England fans to ‘have another shot and text your bosses to say you’re not coming in tomorrow’.

Asked how he thinks supporters are celebrating back home, he added: ‘I can imagine it’s carnage. No matter where you’re from or what you do I can imagine everyone is together.

‘That is the thing I dream of being a part of this England squad, bringing my country together, giving them nights like this that they will enjoy for many years to come.

‘I am so proud of this team. What we have done tonight is spectacular.’

Elsewhere Kane had lost his voice by the time of his post-match interview, but revealed that celebrations for some players had been rather too enthusiastic – with Jordan Henderson requiring medical attention after injuring his arm

All-in-all the Three Lions put in a gutsy performance – including some breathtaking saves from goalkeeper Jordan Pickford after being reduced to ten men – to counter at times relentless pressure from the tournament’s co-hosts.

WAGS Kate Kane and Megan Pickford were in the stadium to celebrate with their husbands, after Kate earlier posed in a custom corset with her man’s name printed on the left side.

Megan, who is married to goalkeeper Jordan Pickford, threw her arms in the air in the first half as Jude Bellingham netted two goals in two minutes to put England comfortably in front – as she sported a white poncho to protect her from the rain.

Kate, the partner of Harry Kane who scored a penalty after the half-time break to bring England’s goal count to three, was also seen beaming in the row behind.

Moments after the final whistle, the Prince of Wales, who is the patron of the FA, sent his wellwishes to the team, writing on X: ‘Well done England! Bring on the quarter final!’

With the game wrapped up shortly after 4am, millions of Brits have pulled an exhausting all-nighter and are expected to be absent from work and school on Monday.

Employers are bracing for a ‘mass sickie’ while some schools are allowing children to arrive as late as 11am without being marked as late.

Speaking at a watch party in Wembley, northwest London, Lorcan Finn, from Devon, said he had already taken the day off work to stay up for the early-hours kick-off.

The 22-year-old engineer said: ‘I think it’s stupid not to take the day off, unless you work from home.’

Harry Becks, 27, from Ruislip, west London, also said there’s ‘no chance’ he will go to work on Monday, adding: ‘I already booked the day off.’

Matt, 27, from Richmond, south-west London, who was at the fan zone with his father Terry, 62, from Preston, is also taking annual leave on Monday.

His father Terry said: ‘I’m older, I do not work. I will wake up tomorrow at home, if I’m not dead!’

‘Hangover Monday’ could cost the economy millions as workers either fail to show up or spend today being unproductive.

Remote workers pulling an all-nighter joked they will just be moving their mouse at work on Monday.

Experts have warned of the dangers of driving or doing physical work while exhausted.

Dr Sophie Bostock, from the sleepscientist.com, said: ‘If you’ve been awake for 24 hours and you’re planning to just ‘push through’, your reaction time slows by over 50 per cent.’

Six million staff – almost one in five employees – have taken annual leave, three times more than usual, industry sources said.

In Mexico City, hundreds of thousands of fans are expected to take to the streets following the last-16 showdown.

Police deployed 7,500 officers to the Azteca Stadium and 6,000 more to the city centre in the biggest operation ever seen for an England football match.

It comes after a million people crowded around the Angel of Independence statue in the city centre after Mexico’s match against Ecuador last week, with four people dying in the crush.

Kate Middleton ‘had to explain’ basic parenting task to Prince William

Published

on

Cambridgeshire Live

Royal staff members have shared behind-the-scenes insights into the lives of Prince William and Catherine, Princess of Wales, including the common parenting practice the prince had never experienced

Kate Middleton, is said to have had to teach a relatively commonplace parenting activity to her husband, Prince William.

Intimate details of the royal couple’s private life and personal dynamic have been revealed by former royal staff members in a new book, Yes Ma’am: The Secret Life of Royal Servants, written by author Tom Quinn.

Prince William and his younger brother Harry grew up under constant public scrutiny, accompanying their parents King Charles and Princess Diana on numerous tours throughout their early childhood.

Every aspect of their lives – from their formative years and adolescence to their time at university and beyond – has been subject to relentless examination by both the public and the media.

Despite being born into considerable privilege, the pressures and expectations of royal life, coupled with the burden of living under the spotlight, brought with them significant drawbacks.

According to a former Kensington Palace maid, Kate reportedly had to teach Prince William how to give his children a piggyback because he’d never received one as a child.

The maid reportedly told author Quinn: “Kate had to explain many of the things that parents outside the royal family do with their children as a matter of course.

“She had to show him how to give the children a piggyback, for example. William said very quietly, ‘My father never gave me a piggyback.’”

Further revelations about life behind palace walls have also come to light. In an excerpt published in the Times, one former staff member told Quinn: “[King Charles and William] both get irritated very quickly. They are very picky. It comes naturally to them.”

In such circumstances, Kate frequently serves as the voice encouraging “calm”.

The insider added: “I don’t know where William would be without Kate – she hasn’t had everything done for her throughout her life, so she calms him down when he gets a bit fractious.

“She said he sometimes has to be treated as her fourth child.”

Kate received praise from other sources regarding how she navigated the complexities of palace life, as well as the “snooty” attitudes she initially encountered from certain staff members.

A former Kensington Palace employee told Quinn: “Kate is someone who slowly and carefully absorbs the atmosphere of a place, the relationship between people and the rules.

“She doesn’t jump in straight away and try to change everything to suit her way of thinking. She bides her time and is very intelligent and intuitive about other people, what they do and how they behave.”

They added: “She was also coached – not just by William, who wanted Kate to avoid the problems his mother had encountered, but also by the staff.

“Kate was always happy to accept advice both from the lower staff, with whom she got on very well, and from the courtiers, even though some of them were initially very snooty about her.”

Kate married Prince William on April 29, 2011 at Westminster Abbey in London, following a relationship that began in 2003.

Following their marriage, the Princess of Wales assumed the title Her Royal Highness The Duchess of Cambridge, while William received the titles Duke of Cambridge, Earl of Strathearn, and Baron Carrickfergus.

On September 9 2022, Kate became Princess of Wales when William was created Prince of Wales by his father, King Charles III.

Prince William’s mother, Diana, held the title of Princess of Wales before her. She tragically died following a car crash in August 1997. She was 36.

Morrisons returns major in-store feature after public outcry

The supermarket giant is reintroducing its Market Street meat and fish counters after customer feedback, following their removal from 70 stores last year as part of a cost-cutting procedure.

A spokesman for Morrisons said: “Our Market Street counters are part of our DNA.

“They’re at the heart of our offer and a real differentiator for Morrisons.

UK High Street Shops That No Longer Exist

“We closed a small number of meat and fish counters last year – and have learned a lot from that.

“We’ve listened to customers and are now planning to re-open a number of these over the coming months.

“So, customers can look forward to having skilled butchers and fishmongers back in store to prepare their meat and fish just the way they like it.”

Thirty-five meat and 35 fish counters were closed across the UK, but Morrisons has now confirmed that its Great Park Newcastle, Herne Bay, Yeadon, and Bolton Dawes shops are among the first to see the return of the service.

The spokesman said: “The first meat and fish counters have already re-opened at Great Park Newcastle, Thornbury, Herne Bay, Yeadon and Bolton Dawes, with more to follow soon.”

Additional stores are expected to have their Market Street counters reinstated in the coming months.

The counters will include flatbeds and “grab and go” options, offering customers greater convenience.

Morrisons have also said to have “significantly improved” their waste yield for the counters since the closure last year.

The spokesman said: “The re-opened counters will incorporate flatbeds and grab and go options, and all of the significant learnings on yield and waste that the business has made over the last twelve months, to make them more efficient, while delivering the traditional counter service that customers love.”

‘My husband got revenge on entitled neighbour’s kids during parking row’

Published

on

Daily Mirror

A woman and her husband were left fuming when their neighbours allowed their daughter’s friends to repeatedly park on the lawn – so her husband came up with a cunning plan

A woman and her husband were stunned when their neighbour apparently believed it was acceptable to let their daughter’s friends use their lawn as an impromptu car park. Seeking a calm resolution, the couple cleverly blocked the space with pots before heading off for the weekend, hoping to prevent any unwanted vehicles from parking there.

Liv Bee shared the audacious story on TikTok. With a knowing smile, she captioned her video: “Our neighbour lets her teenage daughter’s friends park in our yard, so my husband put these pots on our property line before we left town to go on a trip.”

When they returned home, they found the pots had been shifted and the cars were once again sitting on their grass. Rather than starting an argument, Liv explained her husband chose to set up his folding chair and wait “for them to come out” to tackle the matter face-to-face on his own property.

She included a playful warning for the teenagers and wrote: “Sweeties, if you’re reading this, be prepared. This man has been in a car with his two kids, his wife, and two dogs for a whole day.

“He’s in rare form, ladies,” Liv wrote, displaying her husband boldly repositioning the pots around the vehicles in a calculated act of protest.

The comments section erupted with shock at the neighbours’ bold intrusion onto private property, prompting demands for firm action.

One individual sternly suggested: “Call a tow truck. One company for each car. Don’t pay attention to which one gets which car.”

Frustration mounted as another suggested that such blatant disrespect was only feasible because of an absence of repercussions. “They knew they weren’t supposed to be parking there, or they wouldn’t have moved the markers! No accountability is why people pull this s***,” fumed a TikTok user.

A separate commenter described their cunning response: “Had a neighbour behind me continue using my side lot to drive through to his I asked him to stop multiple times and even put signs up for private property no trespassing.”

They went on: “So I eventually put a board with nails in the ground, which just happened to be in the tracks he drove. I used those nails to help clean the grass and leaves off my rake for lawn maintenance. How was I supposed to know it was gonna get his tires?”

Words like “weird” and “entitled” were thrown around liberally by some observers regarding the brazen neighbours, with others urging Liv and her husband to challenge them – though, apparently, conversation had already proved unsuccessful.

The irritation reached its peak in a blunt statement from an annoyed onlooker: “I said it on a different post today, but I’ll say it again, the level of audacity and entitlement in the world is astronomical.”

A further commenter said: “Anyone saying that these property owners shouldn’t care about people parking on their grass after asking and putting up things to make it obvious they don’t want people there… are the problem.

“These same people are teaching their children to be entitled and disrespectful.”

China test-launches a ballistic missile in the South Pacific

Shootings at school and home in northeastern British Columbia leave 10 dead, including shooter

BANGKOK (AP) — China’s military test-launched a long-range ballistic missile Monday from one of its nuclear-powered submarines in the South Pacific, drawing protest and concerns from countries in the region.

The missile was launched at 12:01 p.m. and carried a dummy warhead, according to an announcement by the official Xinhua News Agency. China last conducted a missile test in the Pacific two years ago, then firing an intercontinental ballistic missile with a dummy warhead.

The launch was part of routine annual training, complied with international law and practice, and was not directed against any country or target, according to the statement from Xinhua, which was reposted by the Ministry of Defense.

Australia and New Zealand criticized the launch.

The New Zealand government said it was informed of the planned launch hours beforehand and noted that the missile was fired into the South Pacific Nuclear Free Zone.

The nuclear-free zone was established by the 1986 Treaty of Rarotonga, which prohibits nuclear weapons throughout the region. China in 1987 ratified the protocols pledging not to test nuclear weapons within the zone, or to threaten to use them against signatories with territory in the region.

“It appears that despite our long-standing concerns about this type of activity, China carried out the test within hours of informing us,” Foreign Minister Winston Peters told The Associated Press in a statement.

The launch took place the same day Australia and Fiji signed a new mutual defense treaty that is meant to counter Chinese influence in the Pacific.

“Australia has been clear with China that we regard this as destabilizing to the region,” Australia’s Foreign Minister Penny Wong told reporters in Fiji, in response to the test.

The England WAGs gave the team a hero’s welcome as they celebrated in the stands after soaring to a 3-2 victory in their crunch World Cup tie against Mexico

Harry Kane, who scored a penalty after the half-time break to bring England’s goal count to three, shared a sweet kiss with his proud wife Kate, leading the post-match PDA for the players.

Megan Pickford, wife of the team’s superstar goalkeeper Jordan Pickford, couldn’t hide her smile as they celebrated with their son Arlo, six.

Megan, who is usually clad head to toe in a designer look didn’t even let her rain poncho ruin the mood, beaming as she hugged and kissed her husband.

Earlier, a jubilant Megan was seen throwing her arms in the air in the first half of the match as Jude Bellingham netted two goals in two minutes to put England comfortably in front.

However, the WAGs looked tense and held their hands over their mouths as the Three Lions tried to close out the match while down to ten men.

It came after defender Jarell Quansah was sent off for a ‘nasty’ challenge in the 54th minute and the mood dipped once more when Mexico reduced the deficit to 3-2 with another penalty.

Earlier, Kate showed her support for England by posting pictures to her Instagram of a white custom corset-like football shirt embossed with the ‘Kane’ surname in red.

She stunned in the sleeveless top, which has been designed by Hugo Boss. The WAG captain also wore a navy bomber jacket which proudly displayed the Three Lions.

Kate had her dazzling wedding ring on display as she smiled into the camera for the photo op.

Meanwhile, Megan donned a poncho as she braved the rainy conditions that forced the kick-off time to be pushed back one hour.

Megan has taken on a ‘mother hen’ role to her fellow partners, with sources saying she’s thrilled to take on her title a la the wives and girlfriends of years past.

‘In a time when the WAGs are lawyers, or nurses or even an engineer, there’s Megan. Some joke, in a kind way, that she’s a bit of a throwback to the old times but it’s just so refreshing,’ one insider told The Daily Mail.

‘She loves it all – the outfits, the glamour and the prestigious role and column inches being a WAG brings. She is so proud of Jordan and so the least she can do is look the part to cheer him on.

‘But in all seriousness, along with Kate Kane – wife of captain Harry – she is the longest-serving partner of the squad. This is her moment to shine, and she will.’

Megan was aged ten at the time of the 2006 World Cup. But she’s clearly been doing her research because nothing screamed WAG like the outfit she wore to cheer on England during their win against Croatia.

In keeping with the match’s Dallas location, Megan wore a cowboy hat with a number one on the front – the same as her husband’s goalkeeper shirt – a white vest and a pair of designer jeans which showed off her enviable midriff.

She finished her look with a pair of Gucci sunglasses, a necklace spelling out her daughter Ostara’s name and a tiny £2,500 White Lady Dior handbag in keeping with the strict stadium rules on bag measurements.

England’s match against Mexico is nothing short of a challenging task, with much of the nation set to stay up into the early hours for the last 16 clash.

Much of the nation is tipped to ‘pull a sickie’ and sleep in after staying up to watch the match, and even England manager Thomas Tuchel has urged kids to have a late start at school so they can cheer them on.

The Three Lions came close to an early exit when they went 1-0 down to the DR Congo in the Round of 32, before two sensational goals by Harry Kane helped them to land the win.

England will also face the impact of playing at high altitude when they take to the field in Mexico

Playing at the iconic Azteca Stadium, the Mexican squad boasts an undefeated record across 10 World Cup matches.

The build-up to England’s Round of 16 clash with Mexico was hit by confusion around its kick-off time on Friday, when FIFA considered bringing the match forward by six hours to try and avoid predicted thunderstorms delaying play

It was proposed that the game would kick off at midday local time, or 7pm UK time.

Official contact was made with both the FA and the Mexican Football Association on Friday, both of whom are believed to have reacted negatively to the proposals.

The earlier kick-off time would have had a significant impact on players’ preparations for the game, which are typically organised down to the most minute detail.

The threat of adverse weather – which was initially thought to be the main factor in the talks – was also a consideration, with thunderstorms forecast for kick-off, which is 6pm local time, although they are currently due to pass by 8pm. Flash flooding, in particular, was a concern.

At one point on Friday evening, it seemed likely the game would be played at the rescheduled time, forcing Brazil’s game with Norway in New Jersey to be pushed back by half an hour to 4.30pm to avoid any clashes.

In the end, FIFA’s attempt to bring England’s kick-off forward was halted by a series of barriers – including a reluctance from officials in New York and New Jersey to shift their own fixture.

The Daily Mail understands a decision to move the game was ‘all but done’ according to those with knowledge of the situation.

The proposals – which the FA was stunned to learn of via Mexican media – were met with an angry response from both England and Mexico, whose coach publicly lambasted the prospect.

Officials in Mexico City are now bracing themselves for what may be an incredibly challenging day, with more than a million people expected on the streets.

England will face a tough test against Mexico at the Azteca, with the co-hosts boasting a formidable record at the stadium.

Thomas Tuchel has admitted his side are at a disadvantage due to having little time to prepare for the altitude in Mexico City.

The match could yet face delays due to thunderstorms being forecast, which could lead to delays due to rules dictating a match be suspended if lightning strikes anywhere within an eight-mile radius of the stadium.

Victory would take the Three Lions through to a quarter-final against either Brazil or Norway.

England have played six times at the Azteca, twice against Mexico, and the results were a draw in 1969 and a loss in 1985.

Mexico is guaranteed to have a fanatical backing while England’s support will be limited to just 4,000.

GMCA to roll out grants to help taxi drivers upgrade cars

GMCA to roll out grants to help taxi drivers upgrade cars

The Private Hire Vehicle Support Fund, expected to cost nearly £2M, will be available to drivers in Bolton and Greater Manchester to help them replace older cars with new cleaner ones.

This comes after the Greater Manchester Combined Authority decided towards the end of June to replace the previous loan model with an entirely grants-based system.

Bolton South and Walkden MP Yasmin Qureshi said: “After the last Tory government tried to impose a charging Clean Air Zone on Greater Manchester, the GMCA with Andy Burnham as Mayor found another way, by showing an investment led approach focused on lowering emissions with a publicly controlled bus network and supporting our local taxi drivers could achieve better results.

“With more zero emission buses now on the road thanks to the Bee Network, the GMCA has approved a grant scheme for private hire drivers registered in Greater Manchester to apply for £2,500 to upgrade their vehicles.

“This supports local drivers and ensures that more drivers are licensed here in Bolton and other local towns where we have stricter oversight.

“This is good for drivers and good for passengers, whilst also showing that investing in our future is a better way of working rather than taxing hard working people for driving as part of their job.”

A report put before the GMCA said that the recommended grant-only scheme would come to an estimated maximum cost of £1.98M across the city region.

This was only slightly more than the previously considered loan and grant scheme, which would have come to an estimated maximum cost of £1.85M.

This was because of the expected cost of revenue-funded administration, bad debt write-off, and other issues.

The report said: “Having considered the risks associated with the loan component, it is recommended that the previously agreed Private Hire Vehicle Support Fund is revised by removing the loan element and moving to a grant-only model, while providing a £2,500 grant per eligible vehicle, being half the previously proposed loan amount.

“The revised grant-only scheme is estimated to cost up to a maximum of £1.98M in total.

“Subject to approval, the updated financial position will be reflected through the relevant budget monitoring reports to the GMCA, alongside updates on scheme take-up and delivery.”

The fund is expected to be officially launched in September this year.

Anissa Helou's new cookbook highlights Lebanese villages scarred by war

BALLOUNEH, Lebanon (AP) — Before becoming one of the Middle East’s most acclaimed cooks and food writers, Anissa Helou had no intention of either path. She entered the world of cooking and writing almost by accident when she was in her late 30s.

Now 74, Helou has a wide following in the region and elsewhere and has released nearly a dozen books since the 1990s about food in the Middle East and beyond. Last month she received Britain’s prestigious Guild of Food Writers Lifetime Achievement Award.

The daughter of a Lebanese mother and a Syrian father, Helou was born into a Christian family and grew up watching her mother, grandmother and paternal aunt cooking. It opened her eyes to the food traditions of the two countries, both widely known in the region for their varied and flavorful cuisine.

“I was always fascinated by the kitchen, by their movements (and) by how they put things together, by the chopping,” Helou said about her mentors. “I love being in the kitchen with them and of course I loved eating.”

Helou’s latest book, “Lebanon: Cooking the Foods of My Homeland,” was officially released in late June in Beirut in a ceremony at Lebanon’s Tourism Ministry attended by scores of people including food critics and restaurant owners.

An homage to the cuisine of Lebanon’s war-battered south

The book, which comes as the country has been battered by two wars in the past three years between Israel and the Hezbollah militant group, includes a section about food in some of the southern Lebanese villages that have suffered the worst destruction.

During her repeated visits there, most recently in October 2023, she found residents had their own regional variations of traditional cuisine. They include mujadara, a dish mainly consisting of lentils that is often cooked with rice, but in southern Lebanon is more likely to be made with bulgur.

“I discovered more, like, variations and added dishes, rather than something that was a complete revelation,” Helou said.

She has picked walnuts from a tree growing along the giant wall separating southern Lebanon from northern Israel and met residents who have lost their homes and businesses in the Hezbollah-Israel conflict.

Helou recalled Moussa Ibrahim from the southern village of Dibbine, which has been the site of intense clashes between Israel troops and Hezbollah fighters. Fighting there in 2024 caused Ibrahim to lose his business producing mouneh: vegetables, fruits, grains and dairy preserved with traditional Lebanese techniques including sun-drying, salting, pickling or submerging in olive oil.

Representing the Middle East and Muslims through recipes

Helou, who has traveled the world to sample food, said she loves Korean and Japanese in addition to Middle Eastern cuisine.

“Lebanese, Iranian and Moroccan are among the greatest cuisines,” Helou said earlier this month in her late mother’s apartment in the Mount Lebanon town of Ballouneh.

“Lebanese cuisine is kind of a little bit more sophisticated, a lot fresher, more vibrant” compared with some other Middle East food, Helou said as she prepared a traditional Lebanese lamb confit called awarma.

Asked for the home of the region’s best food, Helou did not hesitate to move outside Lebanon and name Syria’s largest city, Aleppo.

Famed for its centuries-old covered market, which was badly damaged during Syria’s civil war beginning in March 2011, Aleppo is known for varied and elaborate cuisine with influences from Persia, North Africa and Armenia.

“I think that Aleppo is undoubtedly the gastronomic capital of the Middle East, regardless of me being Syrian,” she said.

Global anti-Islamic sentiments rose dramatically after the Islamic State group took large parts of Syria and Iraq and declared a caliphate in 2014, launching deadly attacks in the region and the world.

Helou responded with a book of about 300 recipes of dishes from Muslim countries.

“I was thinking, one way of presenting Islam and Muslim people positively could be through their foods,” she said.

Starting late in the world of cooking

Helou, who left Lebanon at the age of 21, holds citizenship in Lebanon, Syria and the United Kingdom and has spent much of her time in Britain and Italy. She still regularly visits Lebanon, cooking and asking people how they make specific dishes.

Helou refused to cook for years while she was a young woman and told her partner at the time not to expect her to make meals.

“I didn’t want to be domesticated. I was like a feminist and so I didn’t cook for a very long time,” she said.

One day a friend prepared a meal at their home and Helou saw the happiness it gave her partner, prompting her to think she should start cooking.

Her decision to become a food writer came in 1992 when a discussion with a group of Lebanese living abroad gave Helou the idea of filling a gap in Lebanese cookbooks with a collection of her mother’s recipes. As it happened, there was a publisher looking for someone to write such a book.

“That’s how I started, by sheer coincidence,” Helou said.
