Here’s one of my favorite oil-free dressing recipes. I love the peanut taste, but you could sub with almond butter if you can’t eat peanuts.
1 tbsp peanut butter
3 tbsp rice vinegar
1 clove garlic
1/2 tsp ginger powder or an inch of fresh ginger root, peeled
1 tbsp low-sodium tamari
1 tsp date syrup
2 tbsp soy milk
1/2 cup of water
Blend all the ingredients in a high-speed blender until smooth and creamy.
NOTE that you can double or triple the recipe and keep it in an airtight container in your fridge for up to 5 days.
